In a 8 oz mason jar combine 1/4c fresh lemon juice (about 2-2 1/2 lemons) 1/2c olive oil, 2 garlic cloves pressed or minced, 1/8 tsp sea salt, 1 tsp djion mustard, 1 tsp whole grain mustard, freshly cracked black pepper (about 1/4 tsp)
Shake well in jar.
2 carrots in spiralizer (dip bonus appetizer sticks in hummus!!! The cores)
1/4 c cashews
2 T raisins
1 T minced red onion (or chives I think would be better, I didn't have any on hand)
2 T minced parsley (or cilantro would be great too)
2 T dressing
Serves 1 as a meal or 2 as side dish. So multiply recipe as needed.
Some ADDS: grilled chicken (4 oz per person) 1/4 c snap peas or bean spouts. Dressing will last about 3-4 days. No more than 2 T per one serving.
