Oatmeal Cookie Granola (V, GF)

Ingredients

4c GF rolled oats (do not use quick oats)

1c pumpkin seeds

1c hemp hearts

1 1/2c maple syrip

1c raisins (hold off adding until the last 10 minutes of baking)

2T flax seeds

2T chia seeds

2T cinnamon

2t ground turmeric

1t ground ginger

1/2t sea salt

1/2t ground cloves

1/2t ground cardamom

2t vanilla

Instructions

  1. Preheat oven to 350F

  2. Line large 9x13 baking tray with parchment paper (2 small baking trays work well too, but do not put granola onto one small tray or the oats remain soggy)

  3. Mix ingredients well - except raisins! (spread out evenly across pan)

  4. Bake granola for 20 minutes (mixing every 10 minutes)

  5. At 20 minutes - stir in the raisins - for a total of 30 mins or until granola is golden

  6. Let cool completely (TIP: I like to remove granola from the baking tray and onto a new parchment paper sheet so it cools and crisps up nicely)

  7. Store in airtight container - do not store until completely cooled!
