Arugula Pesto (V, GF, NF)

Ingredients

5oz (by weight) arugula

1c extra virgin olive oil (EVOO)

12 garlic cloves

1/2t sea salt

1 whole lemon (zest and juice)

1c nutritional yeast

2c pumpkin seeds

Instructions

  1. Place arugula into a food processor (pulse about 8 to 10 times to create space in the bowl)

  2. Add remaining ingredients and pulse until the pesto comes together like a paste (scraping down sides often)

  3. Serve over pasta, quinoa, spaghetti squash, cauliflower rice, etc.
